Take a look at
www.yourhome.gov.au/Their technical manual is the best document that I've seen for explaining the fundamentals of energy efficient buildings.
As already mentioned, the
'technical manual' in the above-mentioned website is great! As for all the other input, it's all good, but please don't inundate the kids with an enourmous amount of information to digest & turn them off sustainable living...
As an educational dept. you should be able to get hold of the 'tech manual' disc, if so...order one for every student, they're priceless! We all got a copy during my studies last year and I still use it regularly.
I'd also get in contact with you local Building Designer's Association (www.bdaq.com.au), they should be able to help, I know that the Vic organisation (bdav) have a large library of info.
www.ecospecifier.org is a good one too, although you might have to be a member...
I'm also a subscriber to
www.jetsongreen.com an American website that emails daily updates on everything green in building design. As mentioned, be careful not to mistake the hemispherical differences, but some of the new materials and building techniques are extremely helpful.
I hope it all goes well with the class, from my 'school-based' learning of sustainable building design & living, I changed my (and my family's) whole lifestyle and my career to minimise our own 'footprint'...I haven't heard of this course being done in schools...I hope you set a precedent for others to follow.
