Explaining 50knot wind jump

Just wondering if someone is able to explain how and why this happens? Are they called 'bullets' ?

bullets? More like dodgy software! What a sweet graph that is though. All the stable green almost brings a tear to your eye eh?

it was probably like what i did last week - sailed out to the scarbs marker miles out.. ditched my gear - climbed the ladder stopped the anemometer, spun it really quickly.. lept off the platform, flapped like a bird, plummetted like a cocky hit by a shotgun, hit the water like a humpback... and made my fkn getaway..

swam like cr4p to my gear which was now a longway down wind.. sailed back to ob city , then realised i dont have access to the graph for the scarbs marker...

There's three. One at the Airport (we don't use that), an offshore one, and an onshore one close to the beach.
