Has anyone replaced or repaired a bar that's shedding its grip?
If so, how please?

Or is an Ozone Zephyr (55cm) bar available as a spare part?

I had success using Tennis grip and glue, some used bicycle handle grip as well. This topic's been discussed many times before, search the forum and google you'll find all the answers.
