I've done it a couple of times recently, I used my digital camera in an underwater housing, it has a setting that takes one photo per minute. I rigged it up against the centre strut just behind the leading edge.
A video camera or a stills camera that takes pics more often would be great.
There's a couple of models of "waterproof" digital compacts on the market now that seem popular.
