For the life of me I just can't work out how to land jumps. I don't have too much trouble in light winds on a 12m kite, but when the wind picks up and height and hang time increase I start to struggle. The real problems start when I use the 9m kite which I find much easier to get good height but cannot seem to land any of my jumps. I always seem to hit the water and then bounce up and end up on my back; it doesn’t matter if I land slow or fast. It seems if the kite pulls me sideways instead of down wind. I am obviously doing something wrong but can't work out what.

sounds to me like you are bringing the kite back down early or parking the kite above you while in the air a little off centre, even just parking it at 11.30 instead of fully sheeted in at 12 can make a difference concentrate on keeping it right above you till you really need to dive the kite and land softly.
this is probably also happening a bit with your 12 but due to the slower turning you are not being affected as much.

when you are coming down try diving the kite really hard. see if that helps.
