Seeking some advice : Getting fat in Europe.

Me and my other half are sitting on our bottoms all day long. One of the reasons we are going to migrate to Australia is the lifestyle change. Now, we already know that we like sports on the water, and we have a pretty good idea on which sport we'd like to take on : Kite surfing / Windsurfing.
We're not sure yet which one of them it will be , I guess we'll have to try them both out and see which suits us best. Anyway, as to the advice :

Which area in region Sydney / Woy woy / Toukley / Newcastle / Forster would you guys recommend we settle down ? We don't want to end up in the middle of nowhere, so a town would be nice, but we are looking for a nice area where we can enjoy kitesurfing / windsurfing. So , my questions :

Which area's in NSW would be suitable to kitesurf ?
Would a lake ( like Tuggerah / Budgewoi ) be better to kitesurf, or would the beach be best ?
Could you guys tell me if the lakes are running dry during some part of the year ? Budgewoi seems very shallow and looks like it could run dry any moment, but then again I have never been there so I would need your advice there. I have also looked at Hawkesbury river area, would that be a nice area to kitesurf ? Or would the lack wind be problematic ?

Also , we're a bit worried about the bugs. Are there Leeches in the water in NSW? I heard there's sharks in NSW but strangely enough I'm more scared of Stingrays than Sharks.

Mate, if you're sitting on your ass all day long in Europe it wont change when you get here. Why don't you take up kiting in Europe, there are endless opportunities to kite or windsurf, with a bit of driving.

It depends what lifestyle you're after and if you want to kite in flat water or waves. But in general the best kiting conditions you'll find over in WA. Much better than any of the ones below.

Stingrays are a massive problem (moreso than sharks ) and should be getting the press they deserve .(i'll see if i can find the photo of bigwave daves leg)There are only leeches in freshwater so avoid freshwater creeks and rivers .Again there are other nasties that don't get the press they deserve like bull routs (they burrow into your foot and live in lakes like Tuggerah,lake macquarie) and razor shells that stick up in those lakes too and will slice you open
Australia is a dangerous place and there are more things to worry about than funnel web spiders,red backs and did I mention snakes?We are a hard tough lot down here so HTFU and yes WA is best

Yes Scamp and tell your friends. Anyone thinking of migrating to Oz and taking up kiting should go to W.A. There is a wonderful spot over there called Woodmans Point which is full of friendly locals all willing to help you progress in the sport.
