You are better off going over to the West Coast where you are guaranteed consistent wind and waves all summer.

My tip: Avoid school holidays if you can, which is 19-December to 27 January. The highways are clogged with traffic and every little usually sleepy town is packed with families on holidays. If you do go on these dates you will need to start booking your accommodation now.

But if you're planning your trip outside of those dates there's heaps of awesome places to checkout, and you'll most likely have them to yourself. If you'll have a 4x4 there's plenty of long deserted beaches you can do downwinders on - if you have someone drive down along side.

That time of year the wind mainly comes from the North East in the afternoons, so practically any east facing beach is good to go.

There's some locations pointed out here, but by no means all of them: http://www.nswkba.com.au/locations/north

Otherwise some towns to checkout: Seal Rocks, Old Bar (flat water lagoon + wave beach), crescent head, south west rocks, lennox head, byron bay, brunswick heads... North of there I'm not too familiar with but others may be of help :)

I went to nsw for a couple of weeks and took my 9m and 12m. I did from Newcastle to Surfers Paradise. Wouldn't even bother taking my kites again. I'd head south or west if you want to kite.

everybody heads north and ends up dissapointed. Go south from Sydney. The Illawarra, and in particular the south coast are not only unbelievably beautiful but have bucket loads of wind. 20-25 knot noreasters 4-5 days a week in mid summer are par for the course down south.

It's a ways away time-wise but we have a good spot near Port Macquarie at Lake Cathie. Middle Rock rd. Works in northerly or southerly. Locals partial to beer.

I agree with Bennies post, I grew up on the midnorth coast and wind his unreliable in Jan.

But if you must....
Forster Tuncurry, is ok
Old bar (20min north of Forster IS EPIC! Flat water with good directions
Speak to the locals around the caravan park...
