Does anybody know what this trick is called/how to do it? I've seen it in a few videos but never known its name. It looks really sick i reakon. Its in here

Probably a few different names for it, but i call it a nose or tail "butter slide" because you can only get away with doing it when the water is butter smooth :)

with lots of speed and power your front foot becomes the upwind edge then you need to put all your weight on that foot (even lifting the other). You loose speed while doing it and if you go too hard a face plant will quickly follow.

Will I need to do anything with the kite? Should I keep it fairly high? and would it be easier with smaller/no fins?

keep your kite at about 45. smaller fins and bindings are easier but can be done with straps and fins

No fins and bindings are the way to go. Start off small and slowly push it higher and further around. Check out some vids of Dre he rules at butters.

yeah there are a couple of epic ones in there.
I tried doing them today, they aren't actually that hard but I'm sure they will becom more difficult the bigger the angle of the board. The conditions weren't the best either.

Oh that's some nice riding, but I can see learning that trick involving a lot of inhaled salt water...
