The advantage of the 91 over the 71 is FUF (Far Cup Factor). It gives you more room for error in pitch control. It also allows you to ride in choppier water and to crank hard upwind and also downwind. The short mast is easier for sure and the trick to getting accustomed to the 91, is to ride the board the same height above the water as the 71 (ie, just clearing the wave crests) and enjoy the added depth of the wingtips.
On my 111 mast in the open ocean at speed, I don't have to precisely follow the contours of the waters surface (swells and large chop) to keep the wings submerged, it allows me to keep my speed and make minor adjustments to pitch.
When the mast is submerged, it offers better stability than if half of it is out of the water, so keep the board low to the water until you adjust.

Makes sense Daren, I can follow the contours pretty well and only occasionally breach on the 70 but on the 90 the pitch is so much more exaggerated. I'm making incremental improvements each session on the 70 and sometimes coming around toeside and riding for 100m but toeside is not as yet comfortable. (I can ride toeside on a strapless surfboard all day and switch feet with ease 99% of the time). I'll try to keep the 90 low as you suggest but the FUF is high.
