Here's your problem. When you unhook you shouldn't be trying to hold an edge, and especially not trying to go upwind. The first few times just unhook and ride downwind and a bit towards the kite. Get used to bearing off, unhooking and then timing loading up and edge for a railey, then ride towards the kite again and hook back in.
The whole point of unhooking is to get the kite to back up a little in the window, then as you load you'll get a surge of power that when harnessed by a proper load and pop technique will give you height off the water.
Build up speed whilst hooked in. Unhook. Give it a one-two count in your head* then progressively load up and pop.
* Timing is everything. The delay between unhooking and loading to pop depends entirely on the rider, technique, equipment and conditions.
