Hey BoDiddly, great to see that blues legends kite too!

Foils vs Bow kites is a new version of the age old classic Foils vs LEI.
I've been using the Flysurfer Speed 10 for a year now, quite often alongside locals on Crossbow 12's.
I started using Flysurfers after several expensive repairs and bladder replacements on my 4 line tubes, and frustration with how hard they were to relaunch and self launch/land. So far so good, no expensive repairs, almost %100 relaunch (I've swum in maybe 3 times) easy launch and land.
The Bow's have very similar low end but are much less punishing to use in the top end. Bow's also self launch and land pretty well.
as for
"One thing I keep thinking of is that with the Foil's, wouldn't having so many more attachment points in the bridle make that design a more stable kite?"
Yep, but it's because the bridle allows the kite to form the optimum shape, with a proper airfoil section, and a lighter structure. It's also gonna last longer than the bow because it's spreading the load through all that bridle rather than using a rock hard leading edge with a few bridle points.
Check out the new Flysurfer kites, the Pulse and particularly the new Psycho3 which is just about to be released. Should be huge improvements over the Psycho2, more depower, faster turning, better safety.
Have your mates let you try their kites? Just remember the Waroo is the latest and the Psycho2 is a 2 year old design.
