I've seen landyachts with suspension on the front wheel. I've seen some with a flexible plank at the rear, and some with the y shaped frame that seems designed to have a certain amount of (independent) flex/suspension (?) but I haven't seen yachts with independent rear coil suspension - is there a reason for this?

having independant suspension on the rear gives you a really "soggy" landyacht. when a gust hits that should accelerate you , the yacht simply leans over rides the gust and slugs along. hence the Y farme where the rear axles are designed to build up energy by slowly bending then release it over bumps and dips to keep the yacht rolling. you can make the axles too long or too short ruining the yacht the front suspension is there to ride over bumps, and also allows the mast to stand more upright when a gust pushes the front down ,allowing the yacht to point higher

Would it be useful to be able to adjust the stiffness of the plank, or y type arms, to tune the yacht for different surfaces and wind strength?

Lets get back to the basics, why have suspension?
Are you wanting comfort or something else?
A landyacht is a simple machine using basic physics, there are only a few things that 'input' energy to a yacht that will make a go and this is then working against forces wanting to to NOT go.
If you have a rig that gets its energy from the wind is causing suspension to compress then its probably not going into forward movement.
A good use for suspension is to stabilise the rig so it doesn't shake around causing a delimitation of airflow around the sail.

Interesting to note that we haven't seen any more on this yacht and its progress.... perhaps a little to complex?

keep in min d gizmo that modern suspension on landyachts evolved so that we could sail fast over rougher and rougher terrain.
down at walyungup some older sailors have retired due to back problems from sailing heavily braced club 88 's which rely on the principle of belt and brace construction.
meanwhle one of the oldest pilots on the lake is handicapping himself to give others a chance. his OTT chassis with front suspension is truly like taking a mercedes off road!!!!!

I would not change away from my front suspension on AUS230, It you check this link I have posted . vid one, with suspension and one before I fitted it, both taken in the same area of Lake Walyungup and the same wind conditions.
