I got started on a starboard element 9'8" 30" wide. This is a good all-round board. Like anything you generally get what you pay for and I would suggest a carbon paddle. This should suit your needs. Don't know any of the other brands with a mast fitting.
All the best sup is fun but demands time on the water.

The Naish 12' Glide like in my vid would work well for you.. You really don't need a centerboard.. even in very light winds.. I don't think you would ever use it.

For more wave riding the big Naish 11'6" and 11'4" both have a mast base insert.

Starboard have a few boards that you can windsurf and they even have one with a centerboard if you really want one.

As for paddles.. There used to be cheap crappy/heavy paddles and then very expensive and super light paddles.. Well now you can get some very good paddles and quite cheap.. Buying a very cheap paddle is like using an old heavy fiberglass mast compared to the modern light and stiff mast.. It's very noticeable.. IMO..
