I'm looking for advice on what's people opinions or correct technique on the distance I should have my bottom hand from the handle when paddling. I don't feel as though I have it correct and im varying it alot when paddling - or is that normal?

Pretty normal IMO.. Most people get lazy and reduce the distance between the hands.. Some people put a piece of tape around where the lower hand should be so when they don't feel it they realise they need to reach down more with the lower hand.. Always remember to fully dip the blade so a wide grip requires some bending (pivot from the hips).. and one last thing.. Don't have a grip on the lower hand like you're holding a hammer.. Open the hand slightly at the pulling part of the stroke and hang more off your fingers... Anyway.. That's what I think..
