I just caught my first decent sized Australian Salmon off my board. I've been trawling for them while doing my paddle lately, and caught him on a lure just of Brighton. He put up a great fight, even jumped out of the water at one point.

I don't think they are the best eating fish as they are a bit oily - very good for you though - full of that good oil. May bake him or turn him into some fishcakes this arvo. Looking up recipes now.

From my fishing history I would mount that sucker on the wall.

Well done mate, awesome work. They are lovely as fish cakes or salmon patties with a bit of lemon, they taste nicer than you probably think!

This is what I decided upon - got the recipe from my Brother

Thai fish cakes recipe

2 TBPN salt water
1 tspn sugar
1 1/2 TBSN fish sauce
2 TBSN red curry paste
1kg skinned, minced fish fillets
225gm green beans

Cucumber pickle or sweet chilli sauce for dipping

Mix it all up with a wooden spoon until sticky and form into balls before shallow frying for a few minutes on each side.

Nice catch Oliver, Myself and a few mates go surf fishing near Steaky Bay on the West coast of South Australia and we usually catch some big salmon, and i agree with you not the best to eat. I think the best way to eat is smoke them.......it can be a bit of a pain trying to get the rollie papers to wrap around them and to light but is definately the best way
