I am new to SUP, but in surfing - in general, you should never be scared to undo the screws change your fin set up - It is the quickest way to learn about them, and what they do!
-Sliding your centre fin forward will make the board looser, but of course it will not track as well.
-Side biters will make your board more responsive (give more bite), than if you rode it with only the single fin.
Changing out your fins for diferent size / shapes / configurations can make your board feel like a whole different board. Give it a go!
You could spend hours reading about fin design and function if you do a search with Google!
