Many factors influence the transition from one rail to another when initiating a turn. Board width, board length, bottom shape, rocker, concave, vee, fin shape, fin placement, etc.
Skill and feel influence it as well. Some will like a particular combination others will not.
As AA said major factor is board width. The wider the surf/sup/kite/wind/board generally the slower it is to move from rail to rail. Good shapers use different techniques to help boards make that transition at speed.
Life is a compromise the best rail to rail sup will not float most people that is why widths have crept out over the last couple of years.
