Most of the providers cater to the total newbie that has never SUPed before.
They cover the basics to simply get the newbie up and standing and paddling safely in flatish water.
If you already have your own board and are looking to perfect your paddling or racing technique then explain that to them and most if not all will be able to hook you up with a coach that can assist you.
As David DJ says if your way beyond the basics hook up with any of the regular paddlers and hit the water they are all pretty generous with their time as they love to see others process.
Also drop by one of the many events and have a chat and demo some other boards are you can often learn a lot going from one board to another and back again.
Time on the water cures many evils.
