Sorrento and Hillarys are the best places to stay as both Sat and Sunday's races finish at Sorrento.
Make sure you ask for special race discount to get cheaper rate for SBS. I think there are only ocean front rooms left (at around $225/nght) but you can squeeze 3 into these.

Return flights from Sydney are around $420 at the moment on Virgin.
