If anything the width of a board is what makes it "tippy". Depending how fast you pick it up paddling through the break will be bettween frustrating and impossible. You just have to keep going till you get it. Accept this as half the fun and challange and you should stick with it.
This is why I would go no narrower than 29" minimun. A well shaped 10-10'6" by 30" is nice for fit starters your age & weight? Most good brands have more than a few nice boards in this range.
I have also rode some longer boards like the 12' Hobbie, which surfed like a great mal and paddles very easy. Likewise, a few months back there was an 11' 6" or so Surftech Takayama for sale cheap on here. It is really up to you to decide what you enjoy.
