the underside of boards

Hi looking for some suggestions

Currently fashioning myself an 8'11 board in my hothouse out the back. its very similar to the MC T 9' in shape
I want this baby to really crank on the cut backs and prevent nose dives on steep entry's

what im interested in is the bottom of the board. Im thinking single to double concave, however I have noticed lots of boards are v shaped on the bottom.

Also I have yet to see a sup with sharp edges on the back, they are always rounded of a bit, wondering why?

some nose concave, sort of flat ish in the middle(stability) to double concaves with a slight v in the tail and yes sharp edges- a bit further up than a normal shortboard
