If i buy a 7'6 wouldn't it be too big once I improve?? I'll be surfing once a week I think, hopefully twice!!

With typical mini mals those four inches are really not going to make a lot of difference (noting I am not talking penis envy). I would get the one with the nicer spray and overall look/shape.
If you were comparing 6' 8" fish to 7' 6" mini mal they would start becoming quite noticeably different animals.
