100% do it, Naxos is a great place too, good sailing (even waves sometimes?) but also a nice and not too touristy island.
You could get a job with Flisvos (
www.flisvos-sportclub.com/) or another centre but I'd actually recommend finding a job in a bar instead. Issue with working at a WS center is you never actually get much time to windsurf.
