AAMI insures your boards and gear (as long as they are specified items) in your house and to and from the water. I don't know about on the water though, I would think highly unlikely. You could actually try to get boat insurance, ring a few of them and ask the question. Truth is that unless you ask the right question you wont get an answer you can work with as the people in the call centre aren't necessarily insurance experts. I would also email or ring the windsurfing association in your state and ask them the question if you are a member, they have insurance for members I just dont know what it is.
In addition to the above, In NSW AAMI will cover (as part of contents insurance) your sailing gear whilst away from the house without specification, as long as you insure for "unspecicified mobile valuables". I had $1000 of cover to look after cameras and so forth, but when my car (full of gear) was stolen on NY Day, AAMI sent me a cheque for $1000 for the gear. Now I didnt ever think anyone would steel sailing gear, and obviously they werent after my gear, they were after the car, but the gear went too. Have learned my lesson, and have insured for the full $5000 available under this part of their contents insurance. I rate AAMI very highly, they paid out for the car and the gear very quickly after the due dilligence you would expect.
Whilst the gear is at home, it is covered under AAMIs normal contents. I would suggest however if you have a lot in the way of sailing gear, as mentioned above by Greg, I would insure all the gear under specified items.
BIG HINT: Keep all of your receipts for asll your gear, because if you go to claim you will be asked for them in order to proove you owned the stolen asset. I had lost my receipts for the Ezzy Sails but luckily the retailer was able to delve through his computer system to print me out another copy. THANKS A MILLION MARK!
