I have seen them all and the two I watch over and over are SAWII and PSRWW. I didn't get as much out of SAWI.
SAWII and PSRWW are better to compare as they both deal with wavesailing in onshore conditions.
I really love Peter Hart's presentation style in SAW and the way he breaks things right down, shows the manoeuvre on the beach or with a model windsurfer etc. I also enjoyed it when my wife saw Nic Baker and was like "oooo! who's he?

" and then he started talking and she kinda flinched then just cracked up

(sorry, Nic, you're a good looking man but you goh a foony accent).
PSRWW covers equipment and rigging so much better than SAW with information and advice from the likes of board shapers Keith Teboul (Quatro) and Richard Greene (JP), sail designers Robert Stroj (NP) and Jason Diffin (Simmer), and fin designer Pio Marasco from Maui Fin Company (play the dvd in slow motion if you wanna understand what he's saying

). Straight from the horses' mouths. These guys talk about board selection for onshore conditions, onshore sails rigging and tuning and fin attributes and how to fig where to position it, harness line length and position, footstraps.
The best thing about PSRWW is getting the moves broken down by all your favourite sailors: Robby Naish, Jason Polakow, Scott McKercher, Matt Pritchard, Josh Angulo, Levi Siver, Fransisco Goya, Peter Volwater, Anne-Marie Reichmann etc. With excellent footage to match. So while they're describing what they do, it cuts to shots of them doing just that. Superb!
Both films are well structured and cover pretty much the same content:
