Can anyone recommend a spot round Sydney for some flat(ish?) water blasting in these western winds that are due for the next few days? Easy to launch intermediate sailing would be ideal. I always find the westerly very fickle and gusty, so Im open to ideas.

If you're on the south side, come down to Primbee @ Lake Illawarra. There is a 1.5km by 500m area that you can stand up in. sheltered rigging too with loads of parking. I can confidently say there will be some other Sydneysiders down here tomorrow.
Make sure you've got a weed fin though. <30cm draft and 40 degree rake is good, <25cm draft and 45 degree rake is better, <20cm draft and 50 degree rake and you will be truly on the money!

Yes, a 16cm weedy is what you will depart Primbee with tomorrow, regardless of what length it was to begin with, given the amount of bottom-scraping I suspect will be going on!!

If you don't have a weed fin and don't want to travel you can try foreshore road in Sydney, opposite the airport runway. Access to a small beach is from the carpark at Mill Stream Lookout. The place is flat, but not much space.
Another alternative is Kurnell, but the runs there would be very choppy
