Haven't sailed the byron area, but North Kirra is good in a NW, good introduction to waves, doesn't get too gnarly.
Currumbin (the alley) is the premier wavesailing spot in a SE, but imho it needs to be reading 20 knots SE at Coolangatta airport before it really fires.
Just a bit further north is Miami beach, good in NE or SE, gets a bit of a rip but also collects some top class eye candy.
I'm sure there are many other wave spots but these are the ones I've sailed. Some other people on here will have some more info.

Nebbian is on the money for GC spots. When I lived on the Gold Coast about seven years ago, I would also nip down to the NSW North Coast for something different. IMHO the best spot for sailing southerly winds (which is what is blowing here today....maybe the same up there) with nice southerly swells is on the north side flat rock, ( on angels beach) half way between Ballina and Lennox Head. Not many surfers brave the conditions (like the ones that hide behind the rocks at Currumbin Alley on a SE) as it is a little open, but the rock shelf helps to wrap the waves in nicely for DTL riding, and it can get BIG.
Seven mile beach (main beach) at Lennox in a NE is great.....usually a massive sand bank that pumped mast breaking shore dump after a week of NEs. Fun though with a few guys out....not sure if many sail there any more.
Never ever had a good sail at Byron. The NE is dead onshore. Sailed a few times out in the bay off "The Pass", but it is not really wave sailing when like that. Got to watch some large rocks in the bay that lurk just beneath the surface at lower tides. Would be ok launching off the beach in a NW if there was swell though....never come across it like this.
If the surf is flat on the GC, and you have nothing better to do, I used to sometimes sail North Kirra in a NE, and get bump'n'jump runs all the way up to Snapper rocks, just watch out you dont get too close to the Groynes at North and south kirra.
Hope you get some wind
