Plumbing and electrical all come from the ceiling.
Main lines run up a wall and across the ceiling with droppers down to each electrical/plumbing fixture.
I plumb them every day.
Just out of interest, do a lot of new places use PEX, and would that have changed the way the water was run?
I have an old house, so some of the plumbing is run from the top and some from the bottom, and the same for the wiring.
I would say 90% of plumbers use PEX for house plumbing now days.
pre 80's it was more common to run water pipe under slabs and up from the floor through the walls to each fixture, however as the copper pipe deteriorates and leaks under concrete slabs it can be a real pain to repair/replace, Hence pipes in ceilings are much easier to access. Also PEX doesn't have the corrosion problems as copper does, also reduces water hammer as the pipe is not rigid, One downside is the rats also like it, I had to repair one the other day that had been chewed to bits, the rats had also chewed the plastic covers of all of the down lights.

some older houses also had cold run under the slabs and hot run through the ceiling.
I also know of some older plumbers who still use the "old ways"
Not real practicale for later day maintainence.
