Kiting and windsurfing gear are toys. They are not boats. Their use should be limited to relatively close inshore play. Not so close that you ting the edge or terrorise beach goers but not so far out that you cannot fairly easily swim in.
Big crossings are not an achievement. All it means is the weather was good, your gear didn't break, and you hung on long enough. Most of this is luck not skill.
There are lots of sports where distance covered is part of the challenge and they are designed for doing that sort of thing safely. Try gliding (including hang and para) or yacht racing.
I'm not as confident as Silviu and have several friends with boats who of which one would gladly sheppard.
As far as the achievement side goes, it's all a matter of personal perspective, is it not. For several years I participated in the Great Victorian Bike Ride with School groups and just as well I didn't have your idea of achievement in mind,” well, you didn't really achieve anything, just luck, your bike didn't break down and all ya did was push the pedals".
I used to parachute in the military and found it quite boring; I'd consider a bay crossing a bigger achievement, personal perspective.
