my two cents
i lived on south coast UK for a few years and sailed heaps all over uk, Ireland, Europe and travelled with one board 87L (starboard evil twin then quad - preferred the evil twin though) and had sails of 5.3, 4.5 and 4.0
for uk my most used sail was 4.5 then equal 5.3 and 4.0
about 88kg
id say if you're 78kg go something around 80L with fast rocker, some mentioned 82L stubby that would be sick but it'll overpower you quick. Maybe an 80L code something with a narrower tail so a bit more control
youll be on a 3.7 / 4.2 a lot more than 5.6
if it's 5.6 weather it's summer and flat as
I originally had a 6.1, used it once then sold it as it was never good when light
