That first offshore photo looks pretty windy, Greece is windy alright, especially eagean sea.
5.7 and 6.7 sails require outside back foot straps, so you can think your big board for these sails. Although you can keep you existing Kode, 100lt range would be better.
For small board you should have single back foot strap. In my opinion, for lightweight people, 85lt is about max to have easy leverage at back foot (single strap), i guess depending mostly on tail width. Thats why i would suggest 85lt multifin to use with small sails (<5.5). It may be a bit difficult at first but you will get used to it.
Later you can upgrade your big board with a smaller size freeride or freerace baord.

I tried with 6.0 camberless freerace sail, although still getting used to the sail, its much better for keeping the board off the water, especially at top end. Interestingly less downhaul made it fly better.
First time up to 7th and 8th gears over chop with gusts, i guess those were moments when i was properly flying on fin, when i was overpowered at 20+kt, i am already switching to small gear before that point.
So i decided to change my a bit raked freerace g10 fin with a more upright carbon slalom fin at same length, hoping to get a bit more lift and less effort to hit thoese upper gears with a bit less wind.

Need advice to make the board fly on fin.
Stopped wingfoiling, want to try speed freeride for lightwinds. Never used slalom board or cammed sails before so got a freerace board, tried it today with a wave sail, boards nose was sticking a lot when sail was not powered up, it was ok when powered. Footstraps are back, mast track all the way back, boom 5cm higher than my normal.95lt 61cm, 32cm g10, 5.5m, 16-18kt, 62kg
I am planning to get a 6.0 freerace sail as well, but i am a bit confused, would that sail would make it stick even more?
Or should i change the fin? In what way?

Although mine was too big for me, i also didnt like the feeling of top turns with Cube. Tried different setups and fins, but didn't try twin. I am lightweight, mast track all the way back, tiny rears and asymmetric fronts helped with bottom turn but still didn't have enough leverage for top turns.
Amazing for bump and jump, early planing and very fast, very comfortable too.
