The unity is a (nearly) 15 year old kite. Go for the Gin Marabou. Its less high performance so less likely to cause an issue and yard you during launch. Its lighter so less likely to stall in very light winds.
However, given your requirements of 6-10m/s (so 12-20knots) and launching from the water - get a secondhand single strut LEI like the airush ultra or ozone alpha. They will be cheaper and more versatile. Launching a foil kite from the water isn't a beginner skill. You'll get more time on the water so more improvement.
TLDR - Always go for the easier progression kite. You'll make more progression. If you don't know that you need the performance - you probably don't need the performance.
