Yeh the broome wind lacks punch hey, so you have the right quiver IMO so far.
So I'm 75kg right and the cat does indeed have a lot of bottom end. Grunty bottom end at that

With perth winds I can be out in anything above 20, but of course why would I waste those winds when I could be on my 10m edge. But if waves are aorund its the cat. Had it out in 25 to 30 (winter winds) and to be quite honest I wouldn't want to take it out in anymore than that.
So I think the 8m advice is a good one. You don't need a 6 up there for those two days you might use it before a cyclone just hits the shore! Taking into account your weight and the winds up there. If you were my weight or larger I'd say settle on the 10m so you can fit right into the sweet spot when the wind is at it's best.
Then again.... would you rather have an 8m that can be useful when the wind blows real strong...not many days of the year. Or would you like to have that 12/10 combo to really dial in those 17 to 25 knot days where the best kiting is to be found.
