Ditch the 80cm pulley bar!!

At risk of stating the obvious, a 7m kite is always going to be fast. Apart from the very first couple of hours flying a kite (first body drags etc), most people wouldn't use one unless they were an experienced kiter heading out in 25+ kts.. or like 45 kgs maybe.
If you have multiple attachment points on the kite (where the lines join the kite) then use the inside (centre most) ones. A smaller bar would slow the turning down too, if you just happen to have one.
Definitely take it to your local and ask around until you find someone that will spend half an hour checking it thoroughly with you, line lenghts, attachment, thru to flying. Someone coming in after a good sesh, all stoked with a big smile on their face, would be a sure bet to help you
