If your on the South side of the bay go to Husskinson they all kite at Collingwood Beach this works in a NE wind, if you want some surf head over to Sussex Inlet or Green Island which works in a Se or Ne wind.

If your on the North side of the Bay you can kite Callala Beach in a NE or SE or SW wind.If you want surf go to Currarong this works in a NE or NW.Cullburra works in a SE if you want surf.I will be down there also and staying at Callala Bay hope to see you down there.

Winds are generally stronger than Sydney, most days I ride my 12 and and 9 meter kites.Hope the wind gods are good to us , had a week down there over the Christmas break and kited everyday, winds were NE between 20 and 30 knots.

As for places to stay your best bet is Husskinson , Jervis Bay is not as commercialised as the North Coast so accomadation is limited.

Collingwood is where everyone seems to launch from.

If you haven't booked a place to stay yet good luck. There's 2 camp sites in town ones call Huskison white sands resort but can't remember the other. There's also a couple camp sites just out side of town. If you look up Dr. Surf I think he used to have a couple of cabins he used to rent out he may also know of a couple other places.
