It would either be Newcastle or Port Macquarie, I guess its going to be a very long three hour drive to the coast. I you drive about 4 hours you can take your pick of any of the coastal towns on the mid north coast

You might find a few big dams out there.
I remember going to a sport & rec camp at lake keepit a couple of years ago when I was about 11, but I remember it had a lot of trees around.

They do a fair bit of sailing and stuff on keepit, and it gets fairly strong out there, but its quite gusty. (Although its only 40km away)

That is the only big puddle (Thats all it will be by the time you get there!) in the area, or prehaps Chaffey Dam (30km) but thats probably no good as there are big hills around 80% of it. Or you could entertain the hoards as you attempt Peel river!!

Coffs is the better part of 3hrs away.

You'd be better off getting smashed at the impy or any of the other "classy" establishments in the town!
