I would assume that established kite-schools already teach new riders the basics of kiting in the surf.

They would advise newbies to stay off the main peak and keep downwind of the pack.
They would insist that outbound newbies give right of way to waveriders....
either by snapping chicken-gybes and heading back to shore to kill time;
or by bearing-off super hard downwind and staying wide.
They would explain the drop-in rule for inbound riding.
These are the fundamentals for newbie wavekiters.
Bruce, you asked for a curriculum for your kite clinic, here's my contribution.
But isn't a kite clinic for wavekiting with a pro-rider as a drawcard....
really just a euphemism for sales opportunity.
Sell some kites and shooters to some surf newbies.

The problem with wavekiting (and surfing) is that there aren't enough waves for the growing crowds.
Any more than 6 kiters to a peak and it's a cluster-f.u.c.k.
If you don't believe me,
ask the wavesailing poleys if they want anymore strings in the zone.
Ask the regular wavekiters if they need anymore 'friends' at their local break.
