you want generally cross shore winds (winds that blow parrallel to the beach) so for most launches there will be wind directions that work better than others.
on east coast of Oz, if you are on a typical east facing beach you would not want to ride an easterly (too onshore - you might hit a hard object on the beach) or a westerly (too offshore - you might not be able to get back to the beach). This would be *opposite* on the west coast. So as there are many points, inlets, bays etc, you should always be able to find a launch that is OK for any given wind direction within an hour or so drive of your local spot...
also as the seasons change so does the prevailing wind direction. Here in brisbane our Northerlies have more or less finished, and we are in our south easterly season, which will soon change to pretty much no wind fo a while, then the winter westerlies will start followed by the next summer season around october/november (and more sweet northerlies
