May/June isn't quite as windy/consistent as it gets there but close, so pretty consistent 18-25 knot winds, occasionally to 30 I guess. (which hotel/centre are you staying at?). Take all your spares, you're a long way from a shop there!
The Red Sea is quite narrow, you can see Saudia Arabia on the other side most of the time. so there is no Fetch for swell
Ras Sudr is on the other side of Sinai (see
thewindmap.com/wiki/index.php/Moon_Beach-Africa - just south of Ras Sudr) so it's still Egypt on the other side, and the fetch to the suez canal is 20-40km (depending on which centre) so on this side you do get swell out the back, say just over head high. It's hard to find spots where it's not going the same direction as the wind though.
Apart from flat water, are there any wave spots / reef breaks?
There are waves in El-Tur (given the right wind) which is further south, so has bigger swell, but it's still pretty onshore.
