Hmmm. There is nothing wrong with teaching people the principles of kiting and safety without actually touching the water or wearing the gear - harnesses, real kite, etc.
I taught a friend the other week on a trainer kite of course, the wind-window, power zone, kite control, and how to self-land and self-launch (that should be taught straight from the beginning IMO). That's where I stopped, told them they need professional lessons on water, and they were happy as Larry (Laurie).
