Years ago I built a sailing bike. Just got an old push bike and made a small rig which mounted to a tube welded behind the front fork downtube. The rig was about 2 square metres and you just hung onto the boom, and sort of hung side saddle.
Later I extended the handle bars to a bit more like a 20's Indian to make it a bit easier.
Tacking was fun, just think about it! It had no form of downhaul so you could just lift the boom over your head. Gybing was, let's say, exciting!
How about a few more "dumb sailing ideas"?

built a micro yacht called "chicken wing" that was too small and light to gybe and so had a massive turning circle. after each gybe the you would shoot off at speed and the front wheel would lift. By sliding your weight forward the whole yacht would lift and fly about 5-10 m before landing.(or not)

thats the whole point. once it get scary you DE- engineer it till you can control it , then push forward once again
