Do the sails on these moths(video) rig and de-rig like windsurfing sails?

The sails on the Moths are more like landyacht sails, designed for a higher speed than conventional water yacht sails, sail board sails are quite a bit different again because of the boom set up.

Ok thanks for that, they look very similar to windsurfing sails, looks like great fun being up out of the water like that and i love the simple trimming system.

A land yacht with an unstayed mast (Class5, Mini and Blokart) use the mast flex to control the sail shape, and in effect have an "active" system that changes with the sheeting.
Most small water yachts and sailboards tend to set the sail up on the beach to suit the "expected" wind conditions and from that point doesn't change much. There are some classes that use a flexible mast that changes while sailing, those being the Finn, OK Dinghy and to a lesser extent the Laser.

the moths your seeing now would take some rigging . you have a windsurfer style sock , looks like some cams , then diamond stays over that and then the actual stays, as the masts are "really light" carbon sections. then lots of downhaul tension and vang tension
it must be worth it for that thrill
