Don't think it will work as old long boards were not that wide.
Tired SUP'ing on my Windsurfer One Design and it is too narrow and unstable to be any good as a SUP even using the centreboard. Sorry.
My current SUP is 30" wide compared to a One Design about 28" or less. That extra +2" does make a difference.
