Construction method and materials used. The shape will be the same, but ultimately the AST model uses cheaper materials and will be a heavier board.

As far as the new naish manas go (not sure about the rest of the range) the AST construction is actually lighter than the bamboo and way lighter than the original model manas and being considerably cheaper than the bamboo I reckon they are way better value than the bamboo - but hey thats only my personal opinion.

It depends on what boards you're talking about.

With the Glides the white boards are wood/carbon construction.. slightly lighter and also come with a board bag.. and better fins.

The AST's (Advanced Sandwich Technology.. I think that's what it means) don't use carbon and instead a slightly cheaper material that is still very strong.

With the boards like the Mana wave boards the Bamboo boards have a gloss finish.. a board bag.. and better quality fins.

Hope that helps.
