In my experience, quads give you more speed in turns or trimming, the drawback being that getting more speed in turns make cover more ground. i.e wider turns or not being able to stay as easily in the pocket.
I would say that quads are better for waves you have no problems with (open face, slow, mushy, ...), but if the wave is powerful and do not have fast sections requiring speed to make, a thruster will give you more control and will be easier to handle.
Note that changing fins on a quad can change its behavior too. Having bigger fins front or rear, and rear fins with symmetrical, asymetrical, or hybrid foil will dramatically change its character. I like to use depths of 140mm front / 90mm back for gutless waves, and 90mm front 110mmm symetrical foil back for juicy waves on my 8'11" (I weight 100kg/230lbs, lighter SUPer will need smaller fins).
