The PFI 730 / W130L combo should get you up in 12 knots, certainly 14. Perhaps using a powerful 6.5m sail at your weight.
I'm a hopeless sail pumper and can get up in 10-12 with a 5.9m Simmer Enduro and W114 (82 kgs).
TOW helps a lot - it's hard to be precise but you develop a feel for unweighting and pumping the foil and also instinctively steal energy from bumps to get going. Raising the boom, moving the sail mast back and foil mast forward also helps.
Over 25 knots TOW again also helps - you begin to subconsciously quickly transfer weight to your front foot to preempt foil lift.
Reverse the sail mast and foil mast moves - increasing the separation aids control.
The PFI 730 should work for you in 12-35 knots - although having 3 wings is always going to be better
