No offense, but wrong approach. No wind or low wind freestyle is boring. Difficult to do, but boring to watch. It sells nothing useful.
Suggestion: have a fixed period during a slalom or racing comp, where people are invited to get on water and do their ware, as a demo (or freak show

Regardless of wind 0 or 30 knots. This is a friendly format, entertaining, eventually some would up the ante from "vaguely curious" to "let's try this". People could share equipment. Heck, use a clap-o-meter to determine an informal winna.
Mix in the lot - both modern and old-style - I personally carry both in case. Anywhere you may be in Oz, you will always find locals who don't slalom to partake and show their antics.
I have been at a couple of those events in the last year, one formal, one informal. It was anything goes, regardless of wind, and no whinging allowed. Was sheer fun - no gimmick.
