You've got great planing speed!

Maybe put a bit more downhaul on so the top of the sail opens up and spills the wind gust rather than throwing you into a catapult (but not too much else you'll lose that speed)? When I was learning the harness lines I remember corking my leg in a catapult so badly I limped for a week or two!

Need to start working on the gybes (and tacks) - get a good instructional video, sail with a mate who can, petition Windsurfing SA to run a gybe clinic, practice, practice and more practice!
