It is a silly thing to do for security. A normal email address will attrack more spam by posting it here, so if it's a real one, you should remove it or at least mung it up so that it's not immediately obvious to a bot scraping email addresses.
I don't even like giving organisations by DoB. For a lot of them they don't need it, and have awful control procedures for that sort of information.
Photographing driver licenses or passports? Not if I can help it. In fact I had an argument with a property conveyancer as they are obligated to determine you are who you say you are, but there is no legal requirement for them to actually copy your ID documents, or at least keep them as far as I know. They are obligated to keep a record that they have successfully verified who you are, but not the ID documents themselves. They don't seem to know this is they get lazy and just photocopy things to cover their arses.
Security is not a simple thing these days. It's relatively easy for someone to impersonate you if they have the right information. Don't take the risk.
Nothing wrong with fear. It's what nature gave us to stop us making silly repetitive mistakes. The non-fearful died out a long time ago.
